– Grain color after roasting – grinding – after mixing with water
– The smell of coffee is granular – after roasting – after mixing with water
– Taste – aftertaste – acidity – density – balance
– Sweetness, uniformity of grain, cleanliness.
As a result, inspectors have competency assessments for certified coffee.
